Ingredients

3 tbspbutter, softened
3 largeegg whites
18 oz pkg of fat-free cream cheese
1/2 cuponion, diced
1/2 cupchopped red pepper
115 1/4 oz can whole kernel corn
114 3/4 oz can creamed corn
18 1/2 oz pkg of Jiffy Cornbread Mix
1/4 tspblack pepper

Steps

Preheat oven to 375°F.

Combine first three ingredients and whisk until smooth.

Stir in onion, bell pepper and corn.

Add Jiffy mix and pepper.

Pour batter into 11x7 baking dish coated with cooking spray.

Bake for 50 minutes or until a knife inserted in the center comes out clean.
