8 servings

3 eachLarge sweet potatoes
1 1/2 envelopePackaged burrito mix
1 can10oz can black beans
1 cupCanned corn
10 mediumSized flour Torillas
4 cupShredded cheese split
8as needed Sour cream if desired

Steps

Bake sweet potatoes at 350 for 1-2 hours until cooked. Peel skin off and mash in bowl, mix 1/2 seasoning pack in with potatoes, then mix in corn and black beans. Mix in half of cheese. Spoon mixture into flour tortilla folding burrito style with seam down. Sprinkle cheese on top and bake at 350 for 15 minutes! Enjoy
