Ingredients

  1. Soup or broth:
  2. 2 1/4 poundsripe tomatoes, fried or roasted
  3. 4 1/4 cupsunsweetened hibiscus water
  4. 1large onion, peeled and quartered, roasted
  5. 1 cupshrimp powder
  6. 3green onion stalks, chopped and roasted
  7. 3roasted pasilla chiles, stemmed
  8. Pinchground cinnamon and cumin
  9. Fresh cow's milk butter
  10. 1 cuptoasted dried shrimp
  11. Salt
  12. Garnish or decoration:
  13. Crispy corn tortillas, julienned
  14. Crumbled fresh cheese
  15. slicesPeeled and pitted avocado

  1. 1

    Heat a pot and add the butter. Meanwhile, blend the first seven ingredients and fry them in the pot. Once it starts to boil, add the shrimp and cover. Cook for half an hour, stirring occasionally. Turn off the heat and let it rest for seven minutes without uncovering. After this time, serve in deep bowls.

    Once served, top with the fried tortillas, avocado slices, and crumbled fresh cheese. Serve at the table.
