These melt in mouth kebabs or kababs from the Mughlai Cuisine are the juiciest and the most succulent mainly due to it's long marination. They literally become as soft as silk. These are therefore often referred to as silky kebabs. These can be made with chicken or mutton mince both.

Ingredients

40 minutes
6 servings
  1. 700 gmChicken mince
  2. 2 tbspfresh cream
  3. 5Green chillies crushed
  4. 1onion large finely chopped
  5. 1 tbspSalt
  6. 1 tbspGinger garlic paste
  7. 1 tspred chilli powder (optional)
  8. 1 tbspCumin powder roasted
  9. 1 tbspCoriander powder roasted
  10. 1/2 cupCoriander leaves chopped
  11. 1/2 cupMint leaves
  12. 1 tspGaram masala
  13. 3 tbspCoconut powder dry
  14. 2 tbspGram flour roasted
  15. 2 tbspLemon juice
  16. 2 tbspPure desi ghee
  17. 1 tbsppure ghee (extra for basting while baking)

Steps

40 minutes
  1. 1

    Coarsely chop the onion, green chillies a little. Add all the ingredients to a big mixing bowl along with 2 tablespoons of ghee.

  2. 2

    Mix well and cover. Let this sit in the refrigerator overnight for best results.

    Next day, either make kabaabs on skewers or mould them with hands.

  4. 4

    Grill them on stovetop or bake them on 200° for 25-30 minutes. Or cook them on stovetop.

  5. 5

    Before grilling or baking, baste them with extra amount of pure ghee generously.

  6. 6

    Alternatively these can be deep fried too.
