Take pan roast whole dry coriander, jeera, Methi Dana, saunf, kalunji on very slow flame.

Cool it and make powder of this.

Wash baigan give long cut on baigan for stuffing masala.

Take plate. Take crushed onion, ginger garlic green chilli paste, chaat masala, Amchur powder, hing, salt, Achar, fresh coriander, Achari oil.

Mix it gently.

Take baiganstuff this masalas on it.

Take one non stick pan. Pour oil.

Heat oil. now add all stuff baigan. Cook it on very slow flame.

Cook Baigan both side.
