Ingredients

  1. 1 lbItalian sausage
  2. 3medium russet potatoes (unpeeled and diced)
  3. 1small onion diced
  4. 4 stripsthick bacon (cooked and diced)
  5. 2 cupskale (veins removed and sliced thin like ribbons)
  6. 5 cupschicken broth
  7. 1 cupheavy cream
  8. to tasteSalt & pepper
  9. 3 clovesgarlic

Cooking Instructions

    Sauté sausage in instant pot

  2. 2

    Add bacon, garlic and onion, sauté 2-3 minutes or until soft

  3. 3

    Turn sauté off and drain extra grease

  4. 4

    Add chicken broth and potatoes to the pot

  5. 5

    Place lid on instant pot, close valve (seal) and set manual timer to 4 minutes

  6. 6

    The pot will take some time to come to pressure-once at pressure it will count down from 4 minutes

  7. 7

    Once the pot beeps (finished) allow the pressure to release naturally for 10 minutes then do a quick release

  8. 8

    Add the kale, stir and let it sit a few minutes until it wilts

  9. 9

    Stir in the heavy cream and season with salt and pepper

Whole 30 substitutions. Use coconut milk 1 can instead of milk or cream. Use 4 cups of chicken stock. Yellow or white potatoes, and crushed red pepper. You can also make whole 30 compliant Italian sauage
