Ingredients

  1. 1 tbsp.olive oil
  2. 1 lb.ground beef (or ground turkey or Italian sausage)
  3. 1small yellow onion, diced
  4. 4 clovesgarlic, minced
  5. 1small bell pepper, diced
  6. 1large zucchini, diced (optional)
  7. 2 cupssliced mushrooms (optional)
  8. 1 can (28 oz.)no salt crushed tomatoes
  9. 1 can (14.5 oz.)no salt diced tomatoes, undrained
  10. 1 can (8 oz.)no salt tomato sauce
  11. 2-4 cupsunsalted beef broth (less for thicker soup)
  12. 2 tsp.brown sugar
  13. 2 tsp.dried basil
  14. 2 tsp.dried parsley
  15. 1 tsp.Italian seasoning
  16. 1 tsp.salt
  17. 1/2 tsp.pepper
  18. 1/2 boxlasagna noodles, broken into smaller pieces
  19. Ricotta cheese, for serving
  20. Freshly shredded mozzarella cheese, for serving
  21. Freshly shredded parmesan cheese, for serving

Cooking Instructions

    Heat the oil in a large skillet over med-high heat. Add the beef and cook until brown throughout, breaking it up as you go. Drain the fat, then add it into a greased slow cooker.

    Add all the additional ingredients EXCEPT for the pasta and cheeses. Give it a good stir and place the lid on and cook on low heat for 4-6 hours

    Once getting ready to serve, heat a large pot of water over high heat on the stove. Once it's come to a boil, cook the broken lasagna noodles according to the package directions. Then drain it and stir the pasta into the soup.

    We like to top our bowls with some ricotta cheese mixed with a little mozzarella and parmesan. Some red chili flakes are good if you'd like a little spice.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights.
