Ingredients

  1. Pickle
  2. 3Eggplants (the small ones)
  3. 1 clovegarlic, crushed
  4. 1/4 cuplime juice
  5. 1/2 tbspturmeric powder
  6. 1 tbspred chilli powder
  7. 1salt to taste
  8. 1 1/2 tbspmustard oil or sesame oil

Steps

  1. 1

    Wash and dry eggplant.

  2. 2

    Remove stems and chop into medium sized pieces about 1.5"

  3. 3

    Mix all ingredients in a clean dry bowl.

  4. 4

    Cover the bowl and keep it in a dark and dry place.

  5. 5

    Mix the contents thoroughly every 3to4 hours.

  6. 6

    The pickle would be ready to eat after 24 hours.
