Wash, peel and rewash the potatoes

Cut into even-sized pieces

Heat a good measure of oil

Add the well-dried potatoes and lightly brown on all sides

Season lightly with salt and cook for about 20 minutes

Turn the potatoes over after 10 min

Cook to a golden brown.

Drain and serve with buttered carrots...
