Ingredients

  • 1/2 lb ground sirloin
  • 3medium carrots
  • 3stalks of celery
  • 2 largeonions chopped
  • 1Handful of parsley, stalks only
  • 10to 20 leaves of sage fresh
  • 2 cloveof garlic
  • 1Whole nutmeg
  • 1Olive oil
  • 1 1/2 lbGood quality crushed tomatoes
  • 1or 2 cups of white or red wine
  • 1or 2 cups of vegetable stock
  • 1Handful of parmesan cheese

Steps

  1. 1

    Chopped carrots celery parsley and onions finely using a food processor.

  2. 2

    Chopped herbs and garlic finely

  3. 3

    Fry all the above on gentle heat until vegetables are soft

  4. 4

    Add the ground beef and fry for 10 minutes. Add salt and pepper.

  5. 5

    Add garlic herbs and half the grated nutmeg.

  6. 6

    Add the wine, mix well and cook allowing evaporation

  7. 7

    Add the crushed tomatoes, mix well cook on low heat for 1 hour add wine and stock if needed

  8. 8

    Cook the pasta al dente and serve with sauce

  9. 9
