Ingredients

  • chicken and Flour mixture
  • 1/2 cupAll purpose flour
  • 1 1/4 tspSalt
  • 1 1/4 tspBlack pepper
  • 2 tspDried oregano
  • 2 3 lb chickens cut up
  • 3 1/2 tbspOlive oil
  • 3Onions sliced
  • 1 1/2 tspChopped garlic
  • 1 cupSliced celery
  • 1 cupSliced carrots
  • 1/2 cupDry white wine
  • 1 14 oz can of diced tomatoes
  • 1 canLow salt chicken broth
  • 2 tbspTomato paste
  • 12kalamata olives
  • 1/3 cupMinced parsley
  • 1 tspDried oregano
  • 1/2 cupFinely crumbled feta cheese

Steps

    Heat oven to 375°F

  2. 2

    Combine the flour salt pepper and oregano in a large plastic bag. Coat chicken pieces

  3. 3

    Heat one and a half tablespoons of oil in skillet over medium heat. Brown the chicken on both sides about 6 minutes. Transfer chicken to casserole dish.

  4. 4

    In one half tablespoon of oil in the same skillet add onions garlic celery and carrots. Cook until onions are soft about 8 minutes. Add the wine, tomatoes, broth, tomato paste and olives. Bring to boil then pour over chicken.

  5. 5

    Bake, covered with foil for 1 hour. . Bake uncovered about 30 minutes more. Can be refrigerated for up to 3 days.
