Ingredients

  1. Fruit
  2. 8fresh peaches peeled and sliced
  3. 1/4 cupWhite sugar
  4. 1/4 cupBrown sugar
  5. 1/4 tspGround cinnamon
  6. 1/8 tspground nutmeg
  7. 1 tspLemon juice
  8. 2 tspCornstarch
  9. pastry
  10. 1 cupFlour
  11. 1/4 cupWhite sugar
  12. 1/4 cupBrown sugar
  13. 1 tspBaking powder
  14. 1/2 tspSalt
  15. 6 tbspUnsalted butter, chilled and cut into small pieces
  16. 1/4 cupBoiling water
  17. 3 tbspWhite sugar
  18. 1 tspGround cinnamon

Steps

    Preheat oven to 425°F

  2. 2

    In a large bowl combine peaches, 1 quarter cup white sugar, 1 quarter cup brown sugar, 1 quarter teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.

    Toss to coat evenly. Pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.

    In a large bowl combine flour, 1 quarter cup white sugar 1 quarter cup brown sugar, baking powder and salt. Blend in butter with your fingertips or pastry blender until mixture resembles coarse meal. Stir in hot water until just combined

  5. 5

    Remove peaches from oven, and drop spoonfuls of pastry dough over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden about 30 minutes
