Fried Rabbit in a cast iron skillet

My son in law wanted me to cook him a rabbit. He wanted it fried so here it is. My favorite parts is the loin alongside the backbone, and the rabbit bellies. I started to make rabbit bacon, lol!

My son in law wanted me to cook him a rabbit. He wanted it fried so here it is. My favorite parts is the loin alongside the backbone, and the rabbit bellies. I started to make rabbit bacon, lol!

Cut the rabbit up use every part. There is so little meat in any one area. The neck has a lot of meat and along the backbone so fry the whole cleaned rabbit.

Season well both sides except the ribbed area on the inside of ribcage. Heat the oil.

Dredge in the flour. Let the pieces rest in the flour for 5-7 minutes.

Fry the rabbit pieces. Save the belly for last to add. It is the thin lining between the front and back legs. It takes about 4 minutes per side to cook. It will take about 15 minutes to cook the pieces. So after about 8 minutes add the breaded rabbit bellies.

When done add to paper towels to absorb excessive amounts of oil.
