A chocolate kiss tops a peanut butter cookie. This is a pretty common cookie style and there's a couple of recipes here already, but they're all a bit...wrong. This recipe is how my family does these, and its great!

Ingredients

40 servings

1/2 cupButter, softened
1/3 cupPeanut Butter
1/2 cupSugar
1/2 cupBrown Sugar, firmly packed
1 tspVanilla Extract
1egg
1 3/4 cupAll-purpose Flour
1 tspBaking Soda
1/2 tspsalt
40Chocolate Kisses

Steps

In a mixer, cream together the softened butter and peanut butter. Add both sugars and cream well.

Add the egg and vanilla to the mixer. Mix thoroughly.

Sift together the flour, baking soda and salt. Blend into mixer slowly, working in batches.

Shape dough into balls about 1" in diameter. Roll in extra sugar.

Place on greased cookie sheet (or I like to use a Silpat). Do not press down. Bake for 8 minutes at 375°F.

Remove from oven and carefully top each cookie with a candy Kiss, pressing it down. Return to oven for about 4 minutes.
