Kofta al-Hati (Oven-Baked Kofta with Potatoes) 🌶🍖

Add only these ingredients to the ground beef—the most important is the lamb fat. Do not add seven spices or anything else.

Arrange sliced potatoes in a baking dish, shape the meat mixture into logs, and place them on top. Bake in the oven. When done, heat a piece of charcoal until red hot, place it in the center of the dish, and pour a little oil or fat over it to create a smoky flavor. Cover briefly to let the smoke infuse.
