Saturn Peaches with Prosciutto and Yorkshire Blue

Shepherds Purse Artisan Cheeses is the hamlet of Newsham-with-Breckenbrough near the town of Thirsk in North Yorkshire, famously depicted by James Herriot’s fictional Darrowby in ‘All Creatures Great and Small’.

Shepherds Purse launched their Yorkshire Blue cheese in 1995. It was the first blue cheese to be made in Yorkshire for 30 years and has since become an award-winning cheese. It is handmade and turned by hand over 8 weeks to achieve the blue veining and creamy smooth texture.

It's a match made in heaven for Prosciutto di Parma, a naturally cured ham without any chemical preservatives or additives, only produced in the province of Parma and protected by the PDO mark of origin. Its production is subject to strict consortium rules and its authenticity is guaranteed by the crown symbol. The pigs whose hams are used come only from Italian farms and are fed with selected feed, including whey from the production of Parmesan cheese. After salting, they are rolled and massaged by hand to allow the salt to penetrate the meat more evenly and are left to rest in the cold then washed and rubbed with a layer of lard mixed with rice flour and pepper to protect the meat from oxidation. The ham is then hung in a maturing room where it matures at a controlled temperature for at least 12 months.

Saturn peaches are flat peaches with a white flesh, are super juicy and sweet and complement the salty cured meat, piney peppery rosemary and sharp funky cheese.

  • 3Saturn (flat) peaches
  • 30 gblue cheese
  • 30 gcream cheese
  • 60 gParma ham
  • 3 sprigsrosemary
  • freshly cracked black pepper
  • tiny pinchsea salt

    Cut the peaches in two and remove the pits. Mix the cheeses together and season with a pinch of salt and freshly ground black pepper. Cut the rosemary sprigs so that they are just longer than the width of the peaches (around 14cm) and strip back 2/3rds of the leaves.

    Fill the cavity of the peaches with the cheese mixture and push the halves back together. Wrap the Parma ham around the peaches and skewer to hold the two halves together with the rosemary sprigs. Bake at 160°C fan in an oven or 180°C in an air fryer for 15 – 20 minutes.
