Shave pineapple sides, leave top and bottom intact

Cut a rectangle shaped section out of the middle of the pineapple. Hollow the pineapple slightly to allow room for ingredients. Save the piece you cut out to put back, like a pumpkin lantern lid...

Layer ham and cheese in pineapple. Skewer the piece you saved back in.

Wrap throughly with bacon and secure with toothpicks

Smoke for 2-6 hours at 150° with apple or hickory wood or bake at 225 for 2- hours

You can substitute the cheese and ham for chicken, boneless ribs, or more bacon..cooking times will vary depending on what you fill it with
