
Mozzarella Chicken
It take a little preparing but it’s worth it.
Steps

Butterfly the chicken and put to one side. Break the egg into a bowl and place a good helping of breadcrumbs on a plate.

Place one of the butterflied chicken breasts in the egg wash, coat well and then place onto the plate on top of the breadcrumbs coating both sides. Then place on a baking tray. Then repeat with the next chicken breast, topping up the breadcrumbs when required.

Place about 10 mm of oil n a pan, so that you can shallow fry the chicken, it won’t take long on a high heat. Once golden brown of both sides remove it and place it onto a fresh baking tray.

Then fry you onions how you like them, with or without balsamic vinegar and then place them on top on the breasts. Then repeats with the sliced mushrooms and place them on the breasts and lastly with the tomatoes.

Once you have stacked up you chicken breasts, add the sliced mozzarella to the top.

Then place in a pre heated oven for about 20-25 mins and add accompaniments if you wish. If the cheese is not melted how you like it, cook for a little longer.
