1 cupPeanut Butter (plain or crunchy)
2/3 cupSugar (may use 1/2 white, 1/2 brown)
1/2 cupOatmeal, steel cut, quick 3 minute
2eggs
1/2 tspBaking Soda

Combine and mix all ingredients.

Let set for 1 hr in refrigerator.

Roll dough into 1 inch balls onto cookie sheet. Apply criss cross pattern with fork.

Preheat oven to 350°. Bake approx. 12 - 15 minutes.

Allow to cool, ENJOY !
