In a large pan saute bacon until it is crispy and brown. Remove the bacon and drain it on paper towel. Add onions and apples to fat in pan and saute till both onions and apple are slightly brown, remove from pan.

Now add chicken breast 1/2s to pan in a single layer, do not crowd brown on each side. Once all breasts are browned add the apples, onions and bacon on top of breasts.

In a measuring cup whisk together the wine or juice, vinegar, mustard, cinnamon , salt and pepper. Pour mixture over chicken, bacon, apples, raisins and onions, simmer on medium- low heat for 20 minutes.

Mix cornstarch in 2 tablespoons cold water. Add this mixture to simmering chicken mixture at the end of cooking time, sauce should be slightly thick glaze like. Remove from heat.
