Ingredients

  1. 5Shallot
  2. 6 clovegarlic
  3. 1Thumb size piece of Ginger
  4. 2 tbspShrimp paste
  5. 1/2 cupwater
  6. 2 1/2 cupchicken stock
  7. 12Green Prawns
  8. 1/3 cupLaksa paste
  9. 400 mlCoconut Cream
  10. 8Fish balls
  11. 1 tspsugar
  12. 1Splash of fish sauce
  13. 1lime juice
  14. 1Pack Vermicelli noodles
  15. 125 gramsShredded cooked chicken
  16. 1coriander leaves and spring onions

Steps

    Blend first 6 ingredients into a smooth paste.

  2. 2

    Shell prawns and fry shells in 80 ml of oil for 1 minute. Discard shells. Add blended paste to oil And fry 1 minute, add 1/3 of laksa paste. Fry until fragrant, add chicken stock and bring to boil, Add coconut cream and simmer. Add fish balls, Sugar, fish sauce and lime juice.

    Cook vermicelli in pan of boiling water, Scoop noodles into Colander, Poach prawns in same water,

    Transfer noodles and prawns to bowl Ladle over broth, top with shredded cooked chicken and bean sprouts. Top with coriander leaves and sliced spring onions.
