Ingredients

  1. 1 cupCoconut Milk
  2. 4 tbspCoconut Oil
  3. 1 smallonion
  4. 2 mediumcloves of garlic chopped
  5. 1 tspthyme
  6. 1 smallscotch bonnet pepper
  7. 2 tspsalt or to taste
  8. 4 cupwater
  9. 3 cupuncooked brown rice
  10. 3 cupKidney Beans

Steps

    Chop onion and garlic

  2. 2

    Add coconut oil, garlic, and onions to a large skillet and saute for a few minutes.

  3. 3

    Add Coconut Milk, thyme, salt, kidney beans, and pepper(Do not cut open the pepper! It is only there to sit in the pan to infuse the flavor. After cooking is done, throw away the pepper. It is extremely hot!)

    Mix and heat up these ingredients then add rice and water. Stir.

  5. 5

    Bring to boil then reduce heat to Low. Cook for about 45 mins, then discard the scotch bonnet pepper. Enjoy!
