Ingredients

6 people
  • 3 cupsEgyptian rice, soaked, washed, and well-drained
  • 1 bunchdill, parsley, and cilantro
  • 1 poundgrape leaves
  • Broth of any kind (beef or chicken)
  • Sliced tomatoes, potato slices, and lemon juice
  • 5 clovesgarlic, finely minced
  • 1 tablespoonsalt, cumin, and ground coriander
  • 1 tablespoonoil
  • 4tomatoes
  • 1onion, chopped
  • 5 clovesgarlic, finely minced
  • 1 tablespoonoil or ghee

Steps

    Heat a tablespoon of oil in a pan and add the onion until it softens.

  2. 2

    Add the garlic and sauté, then add the tomatoes, salt, coriander, and cumin. Stir and let it cook until the liquid reduces. Then add the rice and chopped herbs.

  3. 3

    Prepare the grape leaves with the rough side up and start rolling until all are done. In a pot, place a layer of sliced tomatoes and a layer of potato slices, then arrange the stuffed leaves on top. Pour in 2 cups of broth with lemon juice until it reaches about 2 inches high. Don't forget to place a heavy plate on top and let it cook until fully done.

    Do not open the lid until it cools completely to prevent discoloration.
