Stuffed Grape Leaves

Heat a tablespoon of oil in a pan and add the onion until it softens.

Add the garlic and sauté, then add the tomatoes, salt, coriander, and cumin. Stir and let it cook until the liquid reduces. Then add the rice and chopped herbs.

Prepare the grape leaves with the rough side up and start rolling until all are done. In a pot, place a layer of sliced tomatoes and a layer of potato slices, then arrange the stuffed leaves on top. Pour in 2 cups of broth with lemon juice until it reaches about 2 inches high. Don't forget to place a heavy plate on top and let it cook until fully done.

Do not open the lid until it cools completely to prevent discoloration.
