Soak chick peas in water 8-12 hours.

Cook chick peas in boiling salted water for 60 minutes. Save the cooking water.

Place cooked chick peas in food processor with all the other ingredients. Blend for 2 minutes. Add 1/4 cp of the chick pea cooking water and blend. You can add more cooking water until you reach the desired consistency.

Additional tahini, lemon, cumin, salt, garlic, or pepper can be added until you obtain the flavor you want. The flavor a will mesh as the hummus sits.

Roasted garlic, roasted red peppers, sun dried tomatoes, chipotle, pine nuts, or pesto can be added to change up the flavor.
