I've made this dish many times over and it always tastes great either roasted in the oven or on the barbecue. It never tastes the same as the previous batch i made because I always change the amount of the ingredients.

I've made this dish many times over and it always tastes great either roasted in the oven or on the barbecue. It never tastes the same as the previous batch i made because I always change the amount of the ingredients.

Mix the barbecue, soy sauce, honey and salt together in a small bowl.

Put the chicken in an oven proof dish, and add the marinade mixture and coat the chicken well. Leave to marinade overnight or at least a few hours before cooking.

Pre-heat the oven to 180 C, when its nearly time to cook.

Add the olive oil or butter.

Cover the chicken and place in the oven for about 3o minutes.

Remove the foil/lid, and turn the chicken around. Leave uncovered and roast for a further 30 minutes or until cooked. Note: can also be cooked on the barbecue.

Rest for 5-10 minutes before serving.
