This is an awesome recipe my mother-in-law gave me when I first got married. My husband loves lasagna, but I hate boiling the noodles first. I usually eyeball the ingredients rather than measure, and I'm pretty heavy handed with the cheese :). This is also a great dish to take to someone who has had a baby, or the elderly and shut-ins because it holds well in the fridge or freezer and you just pop in the oven.

Ingredients

8 servings
  1. 9Lasagna noodles, uncooked
  2. 1 lbGround beef
  3. 1 largeJar spaghetti sauce (45 oz)
  4. 2 cupSmall curd cottage cheese
  5. 4 cupShredded cheese (mozzarella, Italian blend, etc)
  6. 1/2 cupParmesan cheese
  7. 1Salt/pepper/sugar

Cooking Instructions

    Brown meat in skillet, seasoning with salt/pepper to taste. Drain. Add entire jar spaghetti sauce. Sprinkle in sugar to taste. Simmer 5 minutes. Stirring occasionally.

    Layer in 8x11 baking pan: 1/4 sauce mixture, 3 uncooked noodles (press into sauce lightly), 1cup cottage cheese, 1 1/4c shredded cheese. Repeat. Add one more layer of sauce, one more layer of noodles and the last layer of sauce. Top with last 1 1/2 cup of shredded cheese, and the Parmesan cheese.

    Cover lasagna with tinfoil covered in baking spray. Bake at 350°F for 50 minutes. Remove tinfoil, broil for a few minutes until cheese browns. Let stand 10 minutes.

    Can be made ahead and refrigerated until cooking. Just throw it in the oven as it is preheating and continue as directed. Can be frozen, just thaw before baking.
