
Bleu cheese asparagus

Break off woody ends of asparagus

Boil water, enough to fully cover asparagus.

Boil asparagus for 6-7 minutes on high. Don't over boil as you will.be roasting the asparagus with the dressing. It will get very soggy and stringy if overcooked.

While asparagus is boiling, prepare the bleu cheese dressing. I prefer extra chunky bleu cheese. Chop 1 green onion, combine with dressing and garlic powder (however much you prefer)

After 6-7 minutes of boiling the asparagus, drain in colander and let cool.

Line baking dish with foil and spray with cooking spray

In prepared baking dish, season asparagus with sea salt, lemon pepper and parmesan. Pour the bleu cheese dressing over the asparagus and bake at 400 for 15-20 minutes (or until easily cut with fork, but not soggy. Don't over cook!)

Serve warm and refrigerate leftovers
