  1. 1 lbChicken Breasts
  2. 1/2 largeGreen Bell Pepper
  3. 1/2 largeRed Bell Pepper
  4. 1 mediumYellow Onion
  5. 1 canRo-Tel Tomatoes and Green Chilis
  6. 1 tbspCumin
  7. 6Tortillas
  8. 1 packagesMexican Rice
  9. 1 canRefried Beans
  10. 6 tbspGrated Cheese

Cooking Instructions

  1. 1

    Cook the peppers and sliced onion in pan until thoroughly cooked. Remove from pan.

    Cook chicken sprinkled in cumin until fully cooked.

  3. 3

    Add back in the peppers and onions and also add the drained Ro-tel. Cook for about 3-4 minutes on med or until warm and bubbling.

  4. 4

    Serve with rice and refried beans. Sprinkle with cheese when in tortilla.
