Ingredients

8 servings
  1. 1 canBlack beans, drained and rinsed
  2. 1 tspGarlic Powder
  3. 1 tspCumin
  4. 1 tspCilantro
  5. 1/4 cupSalsa
  6. 1/2 cupMozzarella or Pepper Jack Cheese
  7. 8Soft Taco Tortillas (Corn)
  8. 1/4 cupOil

Cooking Instructions

  1. 1

    Combine all ingredients except for cheese and tortillas. Coarsely mash mixture until combined.

    Heat a skillet with about 1 tablespoon to begin with to med-high heat.

  3. 3

    Place tortilla in oil.

  4. 4

    Immediately spread mixture on half of the tortilla.

  5. 5

    Sprinkle mozzarella or pepper jack cheese on top.

  6. 6

    Fold the other half of the tortilla over the mixture.

  7. 7

    Cook for about 2-3 minutes on each side or until nice and crispy.
