
Refreshing Pear Parfait

It's time to start lightening up desserts. I love the thickness the yogurt gives as well as flavor and some protein. You can use the pears, apple's and later, summer peaches. This is our way to sit outside, enjoy an evening of good food ending it right.

It's time to start lightening up desserts. I love the thickness the yogurt gives as well as flavor and some protein. You can use the pears, apple's and later, summer peaches. This is our way to sit outside, enjoy an evening of good food ending it right.

Wash and dry pears. Cut them in half and with a small spoon, removed core and stem.

In a skillet over medium heat, melt butter.

Slice pears and place into pan with butter.

Add in ginger, cinnamon and brown sugar. If this is for adults, add 1 1/2 tablespoon cognac. If children will be consuming this, please omit.

Cook one minute then turn to low and cook an additional 5 minutes stirring occasionally.

Remove ginger medallion, turn off heat.

In a mixing bowl add heavy cream. Cream should be very cold. On low speed start beating cream. A whisk attachment should be used. Beat for 30 seconds then add sugar and vanilla. Turn to high and beat until thick and creamy. Just a few minutes.

To set up parfait, in four serving bowls divide the yogurt amongst all four. (1 cup each.)

Top with pears and syrup that was made while cooking.

Top each with a dollop of whipped cream. Enjoy!
