Steps

Preheat oven to 180°Celsius (160 fan-forced).

Melt butter in a small saucepan.

Pour melted butter into a large heatproof mixing bowl, add the sugar, mix well and allow to cool to room temperature.

Add the eggs, flour and salt. Mix until combined.

Roll tablespoons of mixture into balls and flatten on a lined baking tray. As these biscuits spread so much, only place 8 at a time on a tray, spaced evenly. Ensure they are quite flat.

Bake in the centre of the oven for only 10-15 minutes.

Remove from then oven once the edges are lightly browned, any longer any any they will have a burnt taste to them.

Once removed from the oven, place biscuits immediately on a cooling rack to cool. I have found they store better in a glass container container than a plastic one. Enjoy!
