
Mimi's Secret Lemon Chicken

I'm Mimi, according to my son and every recipe I've saved he insists on calling "Mimi's Secret." I've been using this recipe since October, 1995 and it doesn't sound impressive but it's a crowd pleaser. It's easy, uncomplicated and delicious!

I'm Mimi, according to my son and every recipe I've saved he insists on calling "Mimi's Secret." I've been using this recipe since October, 1995 and it doesn't sound impressive but it's a crowd pleaser. It's easy, uncomplicated and delicious!

Melt butter in skillet. Combine flour, salt, pepper and oregano. Dredge chicken strips in flour mixture, then fry in butter until strips are lightly browned. Add broth and lemon juice, then simmer until chicken is tender. Liquid will cook down and thicken, and can be poured over chicken to serve. It's soooo good!

Note: I actually use twice the butter than the recipe states.
