Its a very lemony sugar cookie. Mine were more soft than crispy. Maybe a few extra minutes in the oven would help.

Its a very lemony sugar cookie. Mine were more soft than crispy. Maybe a few extra minutes in the oven would help.

Mix eggs and oil until just combined.

Add in cake mix and stir thoroughly with a wooden spoon. Do not beat.

With a #40 scoop drop onto parchment lined cookie sheet.

Dip bottom of glass into granulated sugar and press cookies to about a 1/4 inch thick.

Bake in 375°F preheated oven for 5-7 minutes. The edges will be SLIGHTLY brown. Let cool on parchment for 1 minute then remove to wire rack.

Once cookies are cooled place back on parchment paper close together.

For glaze: Mix powdered sugar and lemon juice. I used 1/2 a fresh squeezed lemon.

Put glaze into snack sized zippered baggie.

Cut little bit off corner of baggie and drizzle a stream of glaze back and forth over the cookies.
