
quick easy inexpensive beef and veggie noodle surprise

in the largest sauce pan you got (makes 6 to 8 good size servings).

sauté chopped onion and pepper in olive oil.

once onion and pepper have softened add chopped cucumber, corn,mushrooms, garlic, celery seed, paprika, and any other spice you may like.

then add ground beef and simmer till beef is cooked.

crunch up noodle packages and remove seasoning packets.

add water and seasoning packets to the pan, stir well and let simmer five minutes.

dump crunched up noodles to the center of your mixture one at a time pushing them down with a spoon or spatula until noodles are under water. Do not stir, the other ingredients will move to the sides.

turn the burner off cover the pan and let stand on the warm burner till noodles are done. about five minutes.

stir the mixture together, salt and pepper to taste and serve.

this is a very inexpensive quick meal. I like to shake on some Parmesan and serve with a salad ( using up the rest of the cucumber).

cost is about $8 to $10 and only takes 20 to 30 minutes and the kids can help...

I also like to change up the ingredients such as if you have no corn add peas or wax beans or chick peas or Lima beans etc... you get the idea...

also works well with chicken or pork tenderloin chopped.
