This recipe is for an extra large batch. Be sure to use a large enough pot to hold the large volume. You can cut it in half or freeze the extra for a fast meal. Do not put the pasta in the soup until you are ready to serve the soup. Put the pasta in the bowl and ladle the soup over it. Using the lower salt ingredients makes this soup much healthier than the original.

Ingredients

  • 1 lbGround Beef
  • 1 lbItalian Sausage
  • 2 cupOnion (diced)
  • 2 cupCarrots (chopped)
  • 2 cupCelery (chopped)
  • 6 cloveGarlic (minced)
  • 2 canRed Kidney Beans with liquid (low sodium) 15 oz each.
  • 2 canSmall White Beans with liquid (low sodium) 15 oz each.
  • 4 canDiced Tomatoes (no salt added) 14.5 oz each
  • 2 canTomato Sauce (no salt added) 15 oz each.
  • 1 canBeef Broth (lower sodium) 14.5 oz
  • 3 cupV8 Juice (low salt)
  • 2 tbspWhite Vinegar
  • 2 tspOregano
  • 2 tspBasil
  • 1 tspBlack Pepper
  • 1 tspThyme
  • 1 lbDitali Pasta

Steps

1 hour 30 mins
  1. 1

    Brown ground beef and sausage in skillet. Put in large soup pot. Keep fat in skillet.

  2. 2

    Add onion, carrots and celery to skillet. Saute for 10 minutes. Add garlic with about 3 min to go. Add to pot

  3. 3

    Add remaining ingredients to pot, except the pasta. Simmer for 1 hour.

  4. 4

    Cook pasta in boiling water until it is al dente. Rinse in cold water.

  5. 5

    Add cooked pasta to bowl before adding soup.

This is the best! I didn't have any V8 so I use some spicy bloody Mary instead. Oh my gawd!
