
Chicken enchiladas with sour cream white sauce

Preheat oven 350°f

Combine chicken and one cup of cheese

Fill tortillas with combination, then place in greased 9x13 pan

Melt butter over medium heat

Whisk in flour for one minute

Add broth and continue whisking. Cook over heat until it thickens and bubbles up

Take off heat, let cool for a couple minutes, add sour cream and chilies (be careful it's not to hot or sour cream will curdle)

Pour over enchiladas and top with remaining cheese

Bake for 20-23 minutes then umber the broiler to brown cheese.
