Grandma’s Southern Potato Salad

This recipe, though basic, has been passed down throughout my family for generations. It’s always a staple of our holiday dinners and get togethers. It is the epitome of Southern comfort food, in my opinion, and equally delicious! Make it ahead of time for best results.

Cooking Instructions

We’ll start with the eggs. Bring a pot of salted water to full boil, add the eggs and let boil for about 10 minutes. Remove them from the pot to let them cool down.

Secondly, boil the potatoes. We want them to be cooked enough yet still firm. First, peel the skins off. Then get a large pot, cover them with water, bring to a boil and cook for about 10 minutes as well. You can put them in an ice bath once done if you’re in a hurry but I just let them cool off naturally.

Once the potatoes are sufficiently cooled, chop them up into cubes and add them to a large dish. Peel the eggs and chop them up then add them to the same dish. Finally, peel and chop the onion and add it to the dish.

Add the mustard, mayo, dill relish and as much salt and pepper as you want. Mix extremely well.

Refrigerate overnight before serving and enjoy!!

(I do use raw onions but my kids like them but you can also split the recipe in half and use half the onion in one half and one half without. This is what I do for family events cause my dad won't eat raw onions but loves the potato salad!! This recipe is very adjustable between onions, mustard types, mayo and eggs n' taters!!) My Grandma was a great cook, and this is one of her standard recipes - an old-fashioned, nostalgia-inducing potato salad.We didn't have cucumbers in the winter back then, so she used cabbage and added canned tangerines to make it child-friendly. The gentle sweetness is a feature of this salad.Boil the potatoes in well salted water to flavor them.Massage the cabbage with sugar. Sugar? You might wonder...but even if it's not salt, the cabbage will still wilt and become tender!Season the scrambled egg well with salt and pepper.You can use apples instead of the tangerines.
