Ingredients

2 servings
  • 2 lbcarrots or 1 small bag baby carrots
  • 2 tbspolive oil
  • to tastesalt & pepper
  • 1 1/2 tbspwhite wine vinegar
  • 2 1/2 tbsphoney

Steps

  1. 1

    Peel carrots and cut into small thin strips. (Roughly 2" long...see pic)

  2. 2

    Add olive oil, salt and pepper to carrots.
    Toss and mix, ensuring carrots are completely covered in oil.

  3. 3

    Heat skillet on medium heat, add carrots , cook for roughly 10 minutes.
    (Until just starting to soften) be sure to flip carrots regularly.

  4. 4

    Add vinegar and honey, stir and mix well. keep on medium heat for another 3 minutes.

  5. 5

    Reduce heat to low, stir well again ensuring all carrots are covered and let the carrots simmer in honey coating for another 7 minutes, or until carrots are soft to your liking.

  6. 6

    Serve with your favorite main dish and see them steal the show.
