Salmon with Quick Oven-Roasted Potatoes

Peel, wash, and slice the potatoes into rounds.

Place the potatoes in a baking dish with your spices, salt, pepper, and so on. Toss well so all the potatoes are coated with the seasonings. Add the green onions, lemon juice, a little olive oil, and just enough water to barely cover the potatoes.

Cover with aluminum foil and bake at 370°F (190°C) for about 1 hour.

After 1 hour, remove the foil.

Season the salmon with salt, pepper, and a little oregano, then place the fillets on top of the potatoes. Bake for another 15-20 minutes.
