i like cooking beef strongnoff since its sweet and ease to prapare.

Cut the meat into strips approximately 5 cm

Place the butter or oil in a sauteuse over fierce heat

Add the beef strips,lightly season with salt and pepper,and allow to cook rapidly for a few seconds.The beef should be brown but underdone.

Drain the beef in the colander.Pour the butter back to the pan.

Add the shallots,cover with a lid and allow to cook gently until tender.

Drain off the fat,add the wine and reduce to one third.

Add the cream and reduce by a quarter.

Add the lemon juice and the beef strips;do not reboil.Correct the seasoning.

Serve lightly sprinkled with chopped parsley.Accompany with rice pilaff
