Ingredients

20 - 25minutes

12 mini cakes

3overripe plantains (4 plantains in original recipe)
3 tablespoonssugar
Halfteaspoon baking powder
3 tablespoonscoconut oil (Original recipe calls for melted butter)
3 tablespoonsmilk
50 gdesiccated coconut (Half cup in original recipe)
1heaping teaspoon ground cinnamon (half in original)

Pre heat oven to 350F.

Mash plantains in a bowl, add everything else in the ingredient list.

Mix together until blended.

Pour into greased muffin pan and bake for 20 to 25 minutes

Serve as breakfast or as a snack.
