Oven-Roasted Pork Leg
Special dish for Christmas, serves up to 30 portions

Clean the pork leg thoroughly, place it in a baking dish, and pierce it with a fork or knife to allow the flavors to penetrate the meat. Apply the juice of the sour orange.

Start by adding garlic, salt, pepper, and oregano to the sauté. Mix everything and add about 1/2 cup of orange and pineapple juice. Marinate for a couple of hours before roasting.

Place the apple and pineapple on the pork leg and put it in the oven at a temperature of 300 to 350°F for 5 to 6 hours. Check periodically and gradually apply the remaining orange and pineapple juice until done.

Let it rest in its juices for half an hour before serving.
