Shallow fried Chicken

I have always loved making shallow fried chicken but sometimes, it would be beautiful and golden brown on the outside but raw in the inside. This method ensures that your chicken is cooked throughout and that it's still crunchy on the outside.

Defrost tue chicken pieces completely

Pre heat an oven to 180 degrees celcius

In a bowl, place chicken, pour salt over the chicken and put in the microwave on high for 7 minutes. We are now cooking the insides a little so we dont have raw insides.

Remove from microwave.

In a plastic bag, add the rest of the dry ingrdients and shake until they are all mixed in

In a separate bowl, beat the egg

add the microwaved chicken in to the egg making sure all of the chicken pieces are coated with egg

the take each coated egg and place in the flour making sure it's all coated thoroughly.

in a frying pan, heat the olive oil. Put pan on medium heat once the oil is a little runny.

Slowly add in the chicken. Be careful as hot oil pops and burns.

after 5 minutes, turn each chicken piece to other side

Once both sides are golden brown, take the entire pan with the chicken in it and place in the oven for an additional 5 minutes. You might want to drain the oil from the pan first if there is too much oil in the pan it might soak into the chicken making the pieces soggy and oily.

Remove from the Oven, drain excess oil and serve.
