Ingredients

6 servings
  1. 5 stripshickory smoked bacon, cut in big cubes
  2. 2 lbbag of pre-washed collard greens
  3. 1/4 cupsugar
  4. Pinchred pepper flakes
  5. 2 tbspwhite vinegar
  6. 3 tbspsalt... add more to your taste
  7. 3 tbspblack pepper
  8. Splasholive oil at the end

Cooking Instructions

    Sit greens in sink filled with cold water to rinse off any dirt.

    Cut each strip if bacon into 4 pieces. Cook in Dutch oven pot until crispy. Remove bacon and add greens. Fill pot with water until just covering the greens.

    Cover pot. After about 30 mins add salt, sugar, pepper and let boil, covered for an hour. Continue to stir about every 30 minutes until finished. Add pinch of red pepper at end. Add salt/ sugar and pepper to your liking.

    Add cooked bacon back into pot. Traditionally many used “fatback” instead of bacon for deeper flavor OR you may used smoked turkey wing or smoked turkey neck!

    Enjoy with sweet cornbread with a tad bit of hot sauce and vinegar
