Avocado Egg Salad
A healthy, protein rich salad
Steps

Soak the peas in adequate water before boiling/pressure cooking it until they soften

Chop the onion, tomato, avocados and eggs into smaller pieces

Place the peas in a large salad bowl
- 4
Add all the other ingredients one after the other and toss well by adding the olive oil and seasonings
- 5
Serve immediately

Tip: if you prefer a cheesy/mushy salad, feel free to use any of your favourite 7 island salad dressings !

Tip: for a vegetarian version, use more leafy greens and do away with the egg and add chopped cottage cheese instead
