Ingredients

  • 2ripe avocadoes
  • 3hard boiled eggs
  • 1large onion
  • 1large tomato
  • 1.5 teaspoongarlic powder
  • 1.5 tablespoonfreshly crushed black pepper
  • to tasteSalt
  • 2 tablespoonolive oil
  • 150 gmwhite /chickpeas
  • 2 tablespoonbasil /mint leaves finely chopped
  • Juice of 1 large lemon

Steps

  1. 1

    Soak the peas in adequate water before boiling/pressure cooking it until they soften

  2. 2

    Chop the onion, tomato, avocados and eggs into smaller pieces

  3. 3

    Place the peas in a large salad bowl

  4. 4

    Add all the other ingredients one after the other and toss well by adding the olive oil and seasonings

  5. 5

    Serve immediately

  6. 6

    Tip: if you prefer a cheesy/mushy salad, feel free to use any of your favourite 7 island salad dressings !

  7. 7

    Tip: for a vegetarian version, use more leafy greens and do away with the egg and add chopped cottage cheese instead
