Ingredients

Makes 17 servings
  1. 4-5zucchinis (use the pulp)
  2. 3 1/2 ozshredded cheese (100 grams)
  3. 3 1/2 ozfeta cheese (100 grams)
  4. 1large potato
  5. 1yellow onion
  6. 1green onion
  7. Plenty of dill
  8. 1little parsley
  9. Salt, pepper
  10. 1little dry mustard
  11. Plenty of breadcrumbs
  12. 1egg
  13. 1little oil
  14. Flour & oil for frying

Steps

    Puree the zucchini pulp and potato in a food processor, then drain well to remove excess liquid.

  2. 2

    Finely chop the onion by hand or in the food processor, and add everything to a bowl.

  3. 3

    Add the lightly beaten egg, green onion, parsley, dill, feta, shredded cheese, salt, pepper, mustard, and oil. Mix very well until combined.

  4. 4

    Add enough breadcrumbs at the end to slightly firm up the mixture so it can be shaped. It will still be a bit sticky.

  5. 5

    If you have time, let the mixture rest in the refrigerator for 30 minutes.

  6. 6

    Shape into small patties, flatten them slightly, coat with flour, and fry in plenty of hot oil.

  7. 7

    They fry quickly, so watch carefully to avoid burning. Enjoy!
