These zucchini fritters are made with the pulp left over from stuffed zucchini! Don’t let anything go to waste.

Puree the zucchini pulp and potato in a food processor, then drain well to remove excess liquid.

Finely chop the onion by hand or in the food processor, and add everything to a bowl.

Add the lightly beaten egg, green onion, parsley, dill, feta, shredded cheese, salt, pepper, mustard, and oil. Mix very well until combined.

Add enough breadcrumbs at the end to slightly firm up the mixture so it can be shaped. It will still be a bit sticky.

If you have time, let the mixture rest in the refrigerator for 30 minutes.

Shape into small patties, flatten them slightly, coat with flour, and fry in plenty of hot oil.

They fry quickly, so watch carefully to avoid burning. Enjoy!
