Ingredients

20m prep, 30m cook
Serves 4 easily
  1. 1.5tpsp butter
  2. 1.5 tbspolive oil
  3. 3shallots (minced)
  4. 5large garlic cloves (minced)
  5. 24 oztomatoes (crushed)
  6. 6 oztomato paste
  7. 1/2 poundbacon (chopped)
  8. 1 bunchasparagus
  9. 1 pintheavy cream
  10. 1/4 cupvodka
  11. 1 cupshredded parmesan
  12. 1 lbpenne pasta
  13. 1 tbspcrushed red pepper
  14. Salt & Pepper (to taste)

Cooking Instructions

20m prep, 30m cook

    Put oil and butter in a large sauce pan.

  2. 2

    Mix in garlic and shallots. Cook until browned.

  3. 3

    Add crushed tomatoes and tomato paste.

  4. 4

    Cook uncovered for 12 minutes on Med-High heat.

  5. 5

    Boil and cut asparagus into one inch pieces.

  6. 6

    Add asparagus to sauce.

  7. 7

    Add bacon and cook uncovered until liquid has been evaporated.

  8. 8

    Add salt, black pepper, and crushed red pepper.

  9. 9

    Add in heavy cream and vodka. Turn heat up to high and mix. Let cook on high for 2-3 minutes.

    Add parmesan and mix.

  11. 11

    Let sit for a few minutes, then serve over penne pasta.
