Finding the best gazpacho recipe is tough—there are so many versions, and everyone has their own. This is my version with beets.

Wash all the ingredients with water and soak the bread.

Cut all the ingredients into large pieces and add them to a blender along with the well-drained bread.

Add 1 cup of water to help the mixture blend smoothly. Blend (with the lid on) until there are no chunks of vegetables left. The time will depend on your blender's power.

Add the salt, 3 tablespoons of olive oil, and 3 tablespoons of vinegar. Blend again and taste. Adjust seasoning to your liking.

Once everything is well blended, gradually add the remaining cold water while continuing to blend.

Strain the mixture and refrigerate. Enjoy!
