Ingredients

5 servings
  1. 1delica of rice
  2. 1big coconut
  3. 1kilo of fryer chicken
  4. 15 piecescarrots
  5. Red bell pepper
  6. Yellow bell pepper
  7. Green pepper pepper
  8. Purple onions
  9. Halftsp cinnamon
  10. Sea salt
  11. Seasonings
  12. Spring onions
  13. Ginger and garlic
  14. Curry and thyme
  15. Turmeric
  16. 2stem of leek
  17. 10big red tomatoes
  18. Chilli
  19. Halfbottle of vegetable oil

Steps

  1. 1

    Wash the chicken and cut in smaller size

  2. 2

    Add the seasonings,sea salt, diced onions,spring onions,all the peppers,garlic and ginger,half turmeric,half tsp of cinnamon,cover the pot and put on heat.cook till the chicken is soft

  3. 3

    Unshelled the coconut and grate them set it aside

  4. 4

    Wash the rice and put on heat,add some water and the chicken stock to the rice add salt and cook until tender.when is cooked sprinkle the grated coconut on the the rice

  5. 5

    Put a clean pot on heat when is heated pour the oil and allow to bleach a little then add the diced onions,garlic and ginger,add the diced tomatoes and all the peppers and stir fry for a minute

  6. 6

    Add the curry and thyme,seasoning and salt

  7. 7

    Add the leek and carrots and stir fry

  8. 8

    Add the cinnamon and the chicken with the stock

  9. 9

    Cover and cook for a minute

  10. 10

    Then serve with the white coconut rice
